Task 77: How to Prepare Dressings & Vinaigrettes

Make a Basic Vinaigrette
Instructions: Prepare the following recipe.
Make a basic vinaigrette in a jar with:
about 1/3 cup lemon juice or white/red wine vinegar
1 cup cold-pressed, extra-virgin olive oil
Season with salt and pepper to taste. This versatile base will keep for a few weeks in the refrigerator. All you need to do is give the jar a good shake to re-emulsify the vinaigrette before using.
Try this simple vinaigrette at least once and then try experimenting with some of the suggestions below.
1/4 tsp Dijon mustard along with 1/2 tsp minced shallots and 2 tsp minced chives
1/2 tsp freshly chopped oregano and 1 tbsp finely crumbled feta cheese
1/8 tsp minced garlic and 1 tsp honey (to taste)
